Can you believe it? New Year is seriously right around the corner. Before we know it we’ll be saying goodbye to 2012 (although, I for one know it’ll take me at least a month to get used to writing 2013). But even though we’ve all probably been inundated with food and sweet treats as the holidays season has progressed, it isn’t quite time to say goodbye to the food, because we still have one more big celebration coming up: New Year’s Eve.
I have to admit here that New Year’s Eve isn’t usually a huge event for me. Read: If I were to make these cupcakes specifically for the occasion, I’d be eating them at home while watching Times Square on TV. But I’m willing to bet that there are plenty of you out there who actually have big plans for the night, so I’ve got you covered in the dessert department. ;) And if your New Year’s Eve plans sound like mine, then a batch of classic red velvet cupcakes topped with chocolate truffles can only make the night better, am I right?
Like the silky-smooth and oh-so-chocolatey Chocolate Peppermint Mousse I made not that long ago, I made these fun cupcakes as part of my ongoing contribution to Best Friends for Frosting, a site that dedicates every post to the wonderful world of desserts. These are, if I may be so bold as to say so, the best red velvet cupcakes I’ve ever had. The cake is moist and light with just the right, subtle note of chocolate that makes a red velvet unique. The cream cheese frosting on top is so smooth and perfectly sweet, and somehow enhances that chocolate flavor in the cupcakes. As if that weren’t enough, the easiest-ever chocolate truffles stand atop the cupcakes, a chocolate-lover’s dream of rich, dark cocoa flavor. And the glitter sparkling over the entire creation is the final pièce de résistance that makes this a true New Year’s Eve dessert.
If you’re into cupcakes at all, I know you are going to LOVE this dessert, because not only is it dressed up especially for our last holiday of the year (making it a showpiece on the dessert table!), but also the cupcakes are so good you’ll think they’re from a gourmet bakery.
