It’s summer, it’s the weekend, and it’s time for Tropical Fruit Pizza, you guys.

By that, I mean a giant coconut sugar cookie topped with cream cheese pastry cream, fresh tropical fruit, and shredded coconut. Tropical TO THE MAX!

Maybe I’m late to the pizza-is-not-just-for-dinner party, but it wasn’t until last summer that I even knew fruit pizza was a thing. I saw one and I was totally in love with the idea; fruit-topped sugar cookie goodness is something I can defffinitley get on board with. So why, WHY it took me this long to make my own is… I don’t even know.

The thing is, there are a ton of fruit pizza recipes out there, and I wanted mine to be a little different. And I kinda have a new, slight obsession with coconut oil, so I got on this whole tropical track. Turns out, coconut sugar cookies are the way to go, and crazzzzy good. Most fruit pizzas are topped with frosting, but I also have a thing where I try to turn dessert into breakfast, so I figured pastry cream would lighten the whole thing up a bit. Then, I just had to get my hand on whatever tropical fruits I could find in California (not exactly the center of the tropics, ya know), so I ended up with a tropical trifecta of mango, kiwi, and pineapple. Each slice is like a little bit of island paradise, in dessert form.

This is gorgeous, and my mouth is watering just looking at it. I love the idea of baking the cookie with coconut oil. I’ve never tried it, but am starting to come around to the idea of using it, and this recipe seems like the perfect place to start!
