Ingredients

Scale
  • 4 fresh strawberries, rinsed and hulled
  • 1 ounce freshly-squeezed lime juice
  • handful of fresh spearmint leaves (about 12-15)
  • dash of coarse sugar
  • 2 ounces white rum
  • 1/2 ounce simple syrup or agave nectar
  • ice
  • 3 oz club soda, or to taste

Optional Garnishes:

  • mint sprig
  • strawberry
  • lime wheel

Instructions

  1. Muddle: Combine the strawberries, lime juice, mint, and coarse sugar in a tall serving glass and muddle together until the strawberries are broken down into a chunky puree.
  2. Stir in the white rum and simple syrup/agave nectar.
  3. Top off with ice and club soda. Garnish with a mint sprig, strawberry, or lime wheel before serving.

Notes

Ingredient notes:

  • The flavor of this drink will be best if made with ripe, sweet, and local in-season strawberries
  • Make your own simple syrup by combining equal parts water and granulated sugar and heating in the microwave or on the stovetop just until the sugar has dissolved. Let it cool before using.
  • Any unflavored club soda, sparkling water, or seltzer can be used for mojitos.

For a pitcher: 

  • Scale the ingredient quantities based on the size of your pitcher. You can prep steps one and two in advance, and add the ice and club soda just before you intend to serve your mojitos.

For virgin strawberry mojitos:

  • Skip the rum and add extra club soda to taste.
