I am ALL for easy meals. I’ll go all-out for a stunner cake every once in a while, but when it comes to actual food – like the stuff we survive on ;) – easy is pretty much the only language I speak. The truth is, I’ll be more than happy if you want to cook me a fancy meal, but the chances of me cooking you a fancy meal are pretty slim. What I will cook are super-easy, one-pot meals that pack a flavor punch but take very little effort to put together. In other words, what I will cook are these lentils: simple, healthy, and actually (secretly!) really satisfying.

This recipe came about completely by chance – something my mom threw together at one point that I then decided to attempt duplicating. We tend to do things like buy random ingredients that we know nothing about (Indian lentils, in this case) and then create concoctions with them that are completely untraditional and off-the-cuff. Usually it works out pretty well anyhow, and in this situation, well enough that it was worth trying to reproduce (which can sometimes be easier said then done when it comes to throw-it-together kinda meals). And really, it couldn’t be an easier dish to whip up – one dirtied pot, barely any hands-on work, and just a few simple ingredients create a warm, cozy lentil dish with a kick of heat from chile powder that adds a little somethin’ extra perfect for cool wintery nights. It’s the kind of meal that’s completely unpretentious – just healthy, hearty and fulfilling like some of the best meals are. ♡

Let’s Get Cookin': One-Pot Chile & Carrot Lentils {Vegan}

Let’s Get Cookin': One-Pot Chile & Carrot Lentils {Vegan}

An simple, healthy, and hearty vegetarian dish packed with flavor and a kick of heat. {Vegan}


  • 1 1/2 cups water
  • 1/2 cup chopped carrots
  • 1/4 cup white (or black)* lentils (Urad Dal)
  • 1/4 cup brown lentils
  • 3 cloves garlic, minced
  • 1/2 teaspoon dehydrated chopped onion
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon chile powder
  • 1/2 teaspoon extra-virgin olive oil
  • fresh chives, minced, for garnish (optional)


  1. Mix all ingredients (except chives) together in a small saucepan and bring to a boil. Reduce heat to medium-low/medium to retain a low simmer and cook, covered, for 35-45 minutes, stirring occasionally, until water is absorbed, mixture is thick, and lentils are tender. Add more salt to taste if needed.
  2. Serve warm, garnished with fresh chives, if desired.


*White lentils are skinned and split black lentils. I personally have a slight preference for the white lentils in this recipe, but black lentils work well too.

I seriously love lentils.. so this chile is perfect for me. I have to make it, it looks so comforting, nutrition filled and nourishing.
