I figure it’s about time that 4th of July recipe roundup got pushed down from headliner news around here, right? Don’t get me wrong; they’re all killer recipes that deserve to be made year-round, but I’m probably starting to make people wonder whether I realize that the 4th was over a week ago. I might be a bit backed up on getting things done but – I swear! – I do know what day it is. ;)

The last week was actually a blur of sun-filled days spent in Cabo, which means that while I was feasting on Mexican food (in the name of blog research, obviously :p), I wasn’t around to share any post-fourth recipes. Go me for being so prepared! (HAH) On the positive side, I’m back with an a-ma-ma-mazing, easy, no-bake, dessert recipe — because I thinnnnk that might be a good peace offering, yeah? So enough blabbing; let’s talk FOOD.

These little parfaits are just another example of what I’ve mentioned before, that sometimes the best recipes are the ones that come together spontaneously. Take a hot summer day and a fridge full of fresh apricots and the next thing you know, you’re layering all kinds of good stuff like juicy fruit, cookie dough crumbles, and cream cheese whipped cream to make a dessert that seriously kicks butt. It’s a light, summer-perfect kind of treat; all those sweet sugar cookie dough crumbles work magic with the tangy apricots and cream cheese and you wind up with a parfait that’s straight-up addicting… don’t even think you can stop at one bite!

No-Bake Apricot Cream Cheese Sugar Cookie Parfaits


  • Yield: 4 parfaits

Description

A refreshingly light, fruity dessert that combines no-bake sugar cookie dough crumbles with juicy, tangy-sweet apricots and silky cream cheese whipped cream.


Ingredients

No-Bake Sugar Cookie Crumble

  • 3 1/8 ounces (3/4 cup, spoon and level) all-purpose flour
  • 1 3/4 ounces (1/4 cup) granulated sugar
  • 1/2 vanilla bean, split and scraped
  • 1/8 teaspoon salt
  • 2 ounces (1/4 cup) unsalted butter, melted

Apricot Filling

  • 10 1/2 ounces (2 cups) pitted and chopped apricots
  • 2 tablespoons granulated sugar

Cream Cheese Whipped Cream

  • 6 ounces cream cheese
  • 6 1/4 ounces (3/4 cup) heavy cream
  • 2 1/8 ounces (1/4 cup) buttermilk*
  • 1 3/4 ounces (1/4 cup) granulated sugar
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

No-Bake Sugar Cookie Crumble

  1. In a bowl, whisk together the flour, sugar, salt, and vanilla bean seeds, breaking up the seeds as much as possible. Add the melted butter and fold/mix in until mixture is crumbly. Set aside.

Apricot Filling

  1. Toss chopped apricots and sugar together until evenly combined. Set aside.

Cream Cheese Whipped Cream:

  1. In a stand mixer fitted with the paddle attachment (or using a bowl and handheld electric mixer), beat cream cheese on medium-high speed until smooth. Wipe down bowl and beater and add cream, buttermilk, sugar, vanilla, and salt. Beat until smooth and thick enough to hold a peak, wiping down as needed to ensure all ingredients are evenly incorporated.

Assembly:

  1. Place 2 heaping tablespoons of sugar cookie crumbles into the bottom of four (approx. 7 1/2 ounce) jars or other serving vessels. Spoon approx. 3 tablespoons apricot filling over crumbles in each. Divide cream cheese whipped cream between parfaits, saving a small amount for piping on top.
  2. Divide remaining crumbles over cream cheese layer**, followed by remaining apricots. Dollop or pipe remaining cream cheese whipped cream on top of each parfait (I used an Ateco 827 large open star tip to pipe it on).
  3. Chill parfaits in refrigerator until ready to serve.

Notes

*DON’T be tempted to use a buttermilk substitute (i.e. milk and vinegar/lemon juice) in this recipe; the buttermilk is used for its tangy flavor, which a substitute won’t replicate.

**If desired, save a bit of the sugar cookie crumbles to sprinkle on top of the finished parfaits as a garnish.
