Actually, I’m cheating; I’m sitting here writing this on a Friday. But by Wednesday when you’re reading this I’ll be in Boston for a week (← exciting!!!) so this is me being semi-responsible and not ditching the blog without cocktails to keep things going in my absence. I’ll keep today’s post on the short side and just give you the nitty-gritty of what you need to know about this summery drink.

Mimosa meets mojito - this fun spin on a mojito combines two classic cocktails for a refreshing (but strong!) summer sipper.

It’s literally mimosa-meets-mojito: you’ve got your orange juice and champagne, plus your mint and rum. And as you might expect, it’s both extra-refreshing and just a little on the strong side – the way all drinks should be if you ask me. ;) I like to think of it as a bit more intense than a mimosa and a bit more sophisticated than a mojito. Thank you champagne, for making even the most basic of drinks sophisticated.
