Bubbles make everything better, am I right?

They make water better, they make wine better, and they definitely make this cocktail better.

These days I try to save the drinks for special occasions, but with the holidays rolling around it seems like there’s a lot more of those moments that call for a fancy cocktail. If you know me well you know that champagne & prosecco are my go-tos, but there’s something about a cocktail that just makes celebrating a little more fun. That’s why the best of both worlds is a bubbly cocktail, ya know?

This starts out as a twist on a dark ‘n’ stormy, but morphs into something a little different by swapping ginger beer for VOVETI Prosecco and a homemade spiced apple syrup. VOVETI is “a brut style DOC with tempered acidity and a fresh, graceful profile,” which, in my non-fancy words, means it’s crisp, perfectly dry, and exactly what this cocktail needs. Mixed up with the syrup (which tastes & smells exactly like sweet apple cider), spiced rum, and a little lime, it makes for a drink that basically tastes like fall. <3

This one is definitely an easy-drinking cocktail – perfect to share with friends during all the festive gatherings this time of year. Orrrr you could just stay in and make one for yourself. Either way, I support it. ;)

Sparkling Spiced Apple Cocktail

Description

A fall twist on a dark ‘n’ stormy using prosecco and a homemade spiced apple syrup.


Ingredients

Spiced Apple Simple Syrup

1 cup packed apple peels

1 cup water

3/4 cup sugar

1 knob of fresh ginger (about 1 1/2″ x 1/2″ big)

1/4 cup pure maple syrup

Cocktail

ice

2 ounces spiced rum

3/4 ounces apple simple syrup

juice from 1 lime

4 ounces VOVETI Prosecco

lime wedge, for garnish

candied ginger, for garnish


Instructions

Spiced Apple Simple Syrup

In a small saucepan, stir together the apple skins, water, sugar, and ginger and bring to a boil. Reduce to a simmer and simmer for 5 minutes. Remove from heat, cover, and let steep for 30 minutes.

Strain apples and ginger from syrup and stir in maple syrup.

Cocktail

Fill a lowball glass with ice and add rum, simple syrup, and lime juice. Stir together and top with prosecco. Garnish with lime wedge and candied ginger before serving.
