Sparkling Spiced Apple Cocktail

A fall twist on a dark ‘n’ stormy using prosecco and a homemade spiced apple syrup.


Ingredients

Spiced Apple Simple Syrup

1 cup packed apple peels

1 cup water

3/4 cup sugar

1 knob of fresh ginger (about 1 1/2″ x 1/2″ big)

1/4 cup pure maple syrup

Cocktail

ice

2 ounces spiced rum

3/4 ounces apple simple syrup

juice from 1 lime

4 ounces VOVETI Prosecco

lime wedge, for garnish

candied ginger, for garnish


Instructions

Spiced Apple Simple Syrup

In a small saucepan, stir together the apple skins, water, sugar, and ginger and bring to a boil. Reduce to a simmer and simmer for 5 minutes. Remove from heat, cover, and let steep for 30 minutes.

Strain apples and ginger from syrup and stir in maple syrup.

Cocktail

Fill a lowball glass with ice and add rum, simple syrup, and lime juice. Stir together and top with prosecco. Garnish with lime wedge and candied ginger before serving.
